Anyone who cooks according to Ottolenghi cannot do without Isot Biber. This particularly flavourful, fermented chilli from the Turkish region of Urfa delights with a smoky, deep, warm-fruity aroma with raisin-like notes and hints of chocolate and liquorice - and is one of the trendy chef's favourite ingredients. The fully ripe harvested chillies are wrapped in cloths at night during the drying process to make them »sweat«. This is repeated until the chillies have developed their unique aroma. Isot Biber tastes great with meat, lamb, stews, lentil dishes and oriental dips, and as a finish with eggs, avocado and salads.
