Description
To produce this elegant fruit spirit, freshly harvested raspberries are first macerated in pure neutral alcohol to gently extract their delicate aromas. This is followed by a careful distillation process, during which only the heart cut - the purest and most aromatic portion - is retained for ageing. The freshly obtained raspberry spirit is then rested in stainless steel tanks for at least two years, before ageing for a further 14 to 18 months in selected oak barrels. During this maturation period, the brandy develops complex secondary aromas and acquires a pleasant smoothness, gently accented by subtle woody notes. Finally, the distillate is refined with a house-made bonificateur of natural fruit extracts, lending a delicate sweetness and additional aromatic richness.
On the nose, it reveals an intense, elegant bouquet of ripe raspberries, complemented by subtle notes of chestnut purée, soft vanilla and white chocolate. A hint of fine oak rounds off the bouquet and gives the fruit room to fully unfold. On the palate, »Vieille Framboise« is full-bodied, smooth and supple. The rich raspberry aromas settle velvety on the tongue and palate, accompanied by a delicate sweetness and finely balanced roasted notes. The finish is mild, fruit-forward and long-lasting – carried by an especially soft, well-balanced structure.
Serving tip: An outstanding digestif that also pairs beautifully with mature cheeses and fine desserts. Equally suitable as a refined ingredient in sophisticated cocktails. For best results, enjoy »Vieille Framboise« in a stemmed liqueur glass at a temperature between 17 and 21 °C – this allows the layered aromas of this distinguished fruit brandy to unfold fully.

The history of the distillery goes back well over 150 years. In 1846, Gottfried Fassbind founded the »Alte Urschwyzer Brennerei« at Oberarth (Switzerland). Oberarth is situated at the foot of the world-famous Rigi and the Rossberg, on whose sunny slopes a great variety of fruit trees grow, nurtured by the local fruit growers. Today it is the oldest distillery in Switzerland. As early as 1856, Napoléon III awarded the Fassbind distillery a gold medal at the World Exhibition in Paris. Complete family trees and records show that the Fassbind family has been cultivating cherry trees and producing cherry brandy and kirschwasser from the aromatic fruit since 1395. The secret of the full flavour, natural aroma and purity of Fassbind fruit spirits has been carefully passed down from generation to generation. The people of the Swiss canton of Schwyz are proud to process only locally harvested fruits and berries. The high quality of the spirits is guaranteed by close cooperation with the farmers. The name Fassbind refers to the former profession of the family that immigrated to Switzerland from Holland in 1201 - they were coopers (barrel makers). So it is not surprising that the spirits are stored in wooden barrels. »Les Vielles Barriques«, the old barrels, provide the light golden colour of the spirits and give the brandies their unmistakable mild note.
