Description

»Balsamela« is a special balsamic vinegar that has been produced for centuries in the mountainous regions of Emilia Romagna from regional, organically cultivated apples. The fresh apple juice is boiled on direct heat, reduced by slow evaporation and then fermented. The cooked apple juice then has a year to ferment naturally into balsamic vinegar. The use of a » vinegar mother« or additives such as sweeteners and thickeners is dispensed with, which significantly benefits the quality of the vinegar. Unlike grape balsamic vinegars, this cooked apple vinegar does not go through any maturation in wooden barrels, so the aromas of the apple remain fresh and lively. The refreshing aroma with pleasant malic acid and high density (65-66 °Brix) harmonises perfectly with salads, fruit salad, young cheese, mozzarella, risotto, spare ribs, white meat, braised onions and vanilla ice cream or pudding.
