Tonno Catarratto Organic Chardonnay, 750 ml

The vinification: This white wine blend encapsulates the quintessence of Sicily: the native Catarratto and the internationally esteemed Chardonnay, which finds its ideal climatic conditions on the island. The Catarratto thrives at the breezy altitude of 700 metres above sea level, while the Chardonnay is at home at more moderate elevations of 350 metres. Known as the principal white wine variety of Sicily, the Catarratto has been documented since the 17th century, though its cultivation dates even further back. The grape harvest in the organically managed vineyards is conducted entirely by hand, eschewing the use of heavy machinery. Following meticulous selection in the wine cellar, the grapes are gently broken. Vinification proceeds separately according to varietal, and the final blend subsequently matures in oak barrels.Tasting notes: In the glass, the wine presents a radiant straw yellow suffused with greenish highlights, heralding a refreshing tasting experience. The bouquet unfolds with vivacious notes of grapefruit, melon, and apple. On the palate, it is fresh and fruity, yet possesses a good complexity, enchanting with fresh tropical fruits and a balanced acidity. The maturation in oak barrels imparts subtle woody notes that harmonise perfectly with the fruity elements. The finish is lingering, seducing with delicate citrus nuances.Food pairings: This versatile wine pairs ideally with an array of dishes such as spinach gratin with almonds, stir-fried vegetables accompanied by fish, or spaghetti in a caper and tomato sauce. It is also an excellent companion to an omelette with salmon and fennel, or a fruity endive salad. To fully savour the layered aromas, we recommend serving at a temperature of 11-13 °C.
