Posta Pastorella Extra Virgin Olive Oil, 375 ml

The extra virgin olive oil »Extra Pastorella« is produced exclusively from Ogliarola-Garganica olives. Only an extremely small percentage of the oils produced in Italy are monocultivar, in most cases oils are produced from a combination of different olive varieties.
Olive oil has organoleptic properties that are not reproducible. Nutrients accumulate in the flavour in a special way on their way through the wood of the trees, which are about two thousand years old, and pass them on to the fruit. The result is a high-quality oil of unique taste and impressive purity.
After careful and gentle hand harvesting, the olives are cold pressed within twelve hours in the traditional mechanical way and at a maximum temperature of 25 °C. Cold pressing ensures that the oil has a very low acidity (less than 0.3 %) and preserves the oil's valuable organoleptic properties. The low rotation speed of the liquid separation system, the absence of filtration processes and flavour-altering substances result in an oil that delights with its high density and low transparency. The medium-fruity olive oil from the Gargano region (Apulia) is amber-coloured with yellowish reflections and inspires with its fine aroma. Pleasantly soft on the palate, with a velvety note, moderately spicy with a finely integrated sweetness. Expressive olfactory notes reminiscent of grass, almond and artichoke alternate with the mild fruitiness of Ogliarola-Garganica. The perfect addition to pasta dishes such as spaghetti aglio e olio, vegetable or bean soups, grilled meats, fresh crisp salads or as a little amuse-bouche with bread and salt.
