The Mercedes among pepper species: Fermented Kampot pepper is a real rarity. To obtain Kampot pepper - which resembles firm capers in feel - freshly harvested pepper berries are repeatedly turned in salt. In contrast to the usual fermentation by drying, this method leaves some of the moisture in the peppercorn. This results in the intense pepper aroma typical of Kampot pepper, the wonderfully surprising fruit and freshness, as well as good pungency.
Use this Cambodian treat with meat dishes, steak tartar, fish salads, fruit, salad, cheese, buttered bread and creamy pasta dishes.
