This dry marinade with the sweet-fresh flavours of orange and mandarin, the aromatic-nutty note of mace, Malabar tiger pepper and mild herbal notes of sage, oregano and bay leaf harmonises perfectly with seafood such as scallops and prawns. Game, veal and wild fowl such as duck, sea fish and white asparagus, as well as grilled cauliflower also benefit from the spicy lemony freshness. Depending on the application, the spice is sprinkled generously over the food immediately or a few hours before cooking and pressed on well.
